Job Description

JOB DESCRIPTION

DEPARTMENT: Meat
POSITION: Meat Cutter/Butcher
REPORTS TO: Meat Manager

Hand cuts merchandise in accordance with company guidelines on merchandise presentation for retail sale.

Role & Responsibilities:
Cleanliness
• When entering the Meat Department wash your hands following the proper hand washing procedures in the hand sinks provided.
• Maintains back-stock fridge/freezer areas according to department standards. Ensure there is no debris in the area of work, no product on the floor, only on racks and at least 6 inches from the wall.
• Check cleanliness of surface tops to ensure no chemical residue remains from the night before cleaning.
• Ensure you are washing your hands regularly, after handling food, touching hair, face or body, sneezing or coughing, smoking, eating or drinking on break, cleaning, taking out garbage, between changing gloves.
• Only use paper towel to dry hand, never aprons or uniform.
• Keep uniform clean; only wear uniform in the workplace, including proper hat and hair restraints, not to be worn on TTC or in car or public.
• Continuously clean and sanitize your work station surfaces including cutting boards, knives, table tops, scales, saws, grinders, display areas and glass.
• All tables must be lifted, moved away from wall, cleaned with degreaser, rinsed then sanitized. This includes the back of tables, legs and underneath tables.
• Break down the Bandsaw, use degreaser on all parts, rinse clean then sanitize, let air dry (no particles should remain)
• Break down grinders, degrease all parts, rinse then sanitize, let air dry (no particles should remain)
• Break down tenderizer, degrease all parts, rinse then sanitize, let air dry (no particles should remain)
• Ensure backroom cooler is tidy, organized and no product touching floor or in boxes on the floor, everything must be raised.
• Floors in backroom cooler must be scrapped and swept, including under all racks and in hard to reach areas such as corners
• All knives are to be cleaned with degreaser, rinsed and sanitized, then placed into a basket for storage
• All hand sinks and surrounding counter areas are degreased, rinsed and sanitized ensuring proper amount of hand soap and towels are adequate.
• All meat trays on upper part of sink must be degreased, rinsed and sanitized -- TUESDAY
• Remove all items from floating shelves, degrease, rinse and sanitize -- TUESDAY
• Coolers must be emptied. Ceiling, cooler fans and walls must be degreased, rinsed and sanitized -- WEDNESDAY
• Ceilings must be degreased, rinsed and sanitized
• Break down sausage machine, degrease all parts, rinse then sanitize, let air dry (no particles should remain)
• Break down mixer, degrease all parts, rinse then sanitize, let airdry (no particles should remain)
• Break down hamburger machine, degrease all parts, rinse then sanitize, let air dry (no particles should remain)
• Ensure cooler is tidy, organized and no product touching floor or in boxes on the floor, everything must be raised.
• Floors in cooler must be scrapped and swept, including under all racks and in hard to reach areas such as corners
• All product must be removed from the Hanging Cooler, racks, walls, ceiling, floors must be degreased, rinsed and sanitized -- TUESDAY
• Skids must be washed clean, no particles to be left on skids -- TUESDAY
• Main floor must be degreased and rinsed. Ensure to clean all corners, under tables and racks - TUESDAY

Customer Service:
• Maintain strong product knowledge.
• Ensure all dates are recorded when receiving new product, on the box
Safety:
• Inspect stored product in fridges/freezers, Ensure integrity (ie. Expiration dates, damages), physical condition, count of product, Temperature of product being held (not in danger zone 4°C - 60°C), if there are indicators the food in fridges or on racks could be problematic contact manager immediately.

• Take temperature of all fridges and freezers every 2 hours and record on Time Temperature Logs to ensure they are not in the danger zone, 4°C - 60°C. If they are contact manager immediately.

• Encourage safe work practices in others, point out areas where safety training and enforcement is needed, and participate on Health & Safety Program committee.


• When putting product into coolers/storage racks ensure that product is rotated by dates and stored and stacked properly.

• Wears personal protective equipment for safety while using knives, saws, grinders, patty machine.

• Check regularly the condition of all display and storage racks.

General Tasks:
• Cure, smoke, tenderize and preserve meat.
• Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking form.
• Prepare and place meat cuts and products in display counter, so they will appear attractive and catch the shopper's eye.
• Prepare special cuts of meat ordered by customers.
• Shape, lace, and tie roasts, using boning knife, skewer, and twine.
• Complete cleaning/maintenance schedule
• Assist other departments if required.
• Grind meats using power grinders and slicing machines.
• Process burgers, sausages and marinated dishes for retail sale
• Hang and un hang meat carcasses into coolers

Qualifications:
• Food Handlers Certificate
• Minimum five (5) years experience in the customer service industry
• Effective written and verbal communication skills.
• Demonstrated organization skills to manage multiple projects.
• Ability to lift up to 50 lbs repetitively.
• Ability to work outside regular business hours if requested.
